Scoop out the avocado, dice cilantro, garlic, pepper, tomatoes, and onions; squeeze lime, and chop romaine. Drain and rinse beans. Measure corn.
Step 3
Blend all dressing ingredients (cilantro, avocado, lime juice, olive oil, garlic, salt, and cumin) in a food processor, blender, or mash with a fork until smooth. Taste and adjust seasonings if necessary.
Step 4
Place lettuce, peppers, tomatoes, green onions, black beans and corn in a large bowl and toss with dressing.
Step 5
Crush tortilla chips over salad and serve immediately.
TIP
If preparing the recipe ahead of time, save tossing with dressing and Step 5 until just before serving.
