    Directions

    Step 1
    Wash prep area, your hands, and vegetables. Preheat your oven to 425 degrees F.
    Step 2
    Peel and mince the garlic. Peel and cut all of the vegetables into 1-inch chunks.
    Step 3
    Place the chopped vegetables on a large baking sheet, along with the garlic cloves.
    Step 4
    Combine two-thirds of the smoked paprika with salt and pepper, garlic powder and thyme over the veggies. Drizzle with two-thirds of the oil and toss well to coat.
    Step 5
    Add the chicken thighs to the sheet pan and rub salt and pepper and remaining paprika into the tops of the chicken thighs, drizzling them with the rest of the oil. Wash your hands with warm, soapy water for 20 seconds after handling the chicken.
    Step 6
    Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

    5 cloves garlic
    2 cups sweet potatoes
    1 cup beets
    2 cups onion
    1 cup carrots
    2 cups potatoes
    1 1/2 tablespoons paprika
    salt and pepper to taste
    3 tablespoons oil
    1 teaspoon garlic powder
    1 teaspoon dried thyme
    4 pieces (thighs) of chicken
