Wash prep area, your hands, and vegetables. Preheat your oven to 350°F and line a baking sheet with parchment paper.

Cook brown rice according to directions on package. While the oven preheats, cut tofu into 1″ pieces and spread evenly on the baking sheet.
Step 3
Chop broccoli. Peel and slice carrots. Slice cabbage. Deseed and slice bell pepper. Dice green onions (optional).
Step 4
Add broccoli, carrots, bell pepper and cabbage to baking sheet. Shake pan to spread the veggies in a single layer on the pan. Spray/drizzle with oil. Sprinkle with salt and pepper to taste.
Step 5
Bake for 35 minutes.
Step 6
Remove from oven. Add teriyaki sauce and bake for another 10 minutes.
Step 7
Serve tofu and veggies over cooked brown rice. Sprinkle with sliced green onion, sesame seeds, and cilantro to serve.
