    Directions

    Step 1
    Wash prep surfaces, your hands, fruits, and vegetables. Preheat oven to 375 degrees.
    Step 2
    Grate zest of orange (orange part of peel). Drain pineapple. Save juice for drinking. 
    Step 3
    In a large mixing bowl, combine flour, baking soda, oats, cinnamon, orange zest, nutmeg, and brown sugar. Mix well.
    Step 4
    Add egg, oil, milk, crushed pineapple, and vanilla extract and mix well.
    Step 5
    Grate carrots. Add carrots, raisins, and walnuts to the bowl, and mix well.
    Step 6
    Scoop out a heaping tablespoons of dough and place on a greased baking sheet.
    Step 7
    Bake in oven for about 12 minutes until lightly browned . Cool and Enjoy!
    TIP
    Original recipe makes about 24 cookies.

    1/4 cup canned crushed pineapple
    2 eggs
    1 cup all-purpose flour
    1 cup whole wheat flour
    1/2 teaspoon baking soda
    1 1/2 cups rolled oats
    1 teaspoon cinnamon
    1/4 teaspoon ground nutmeg
    1/2 cup brown sugar
    1/2 cup vegetable oil
    1/2 cup low-fat milk
    1 teaspoon vanilla extract
    1 cup grated carrots
    1 cup raisins (or other dried fruit)
    1/2 cup toasted, chopped walnuts (optional)
    1 pinch salt
