    Directions

    Step 1
    Wash prep area, your hands, and all fresh produce.
    Step 2
    Spray coffee mugs (or small, microwave-safe bowls) with cooking spray.
    Step 3
    Dice tomato and bell pepper. Cut broccoli into small pieces. Shred cheese. Set all ingredients aside.
    Step 4
    For each serving, scramble two eggs with milk, salt, and pepper in a mug.
    Step 5
    Split ingredients between the mugs. Add the tomatoes, peppers, broccoli, and cheese to each mug. Stir to combine. Toast bread.
    Step 6
    Microwave each mug individually for 1 minute, uncovered. Remove mug from microwave and stir egg mixture. Cook for one more minute, or until the eggs have set completely. Enjoy!
    TIPS
    Feel free to change mix-ins with your favorite vegetables, spices, herbs, or meats. Remember, microwaves vary. You may need to adjust times according to your particular microwave's cook strength.
