    Directions

    Step 1
    Wash prep area, your hands, and all fresh produce.
    Step 2
    Deseed pomegranate. Peel and slice oranges. Peel, core, and slice avocado.
    Step 3
    Toss arugula with pomegranate seeds, oranges, avocado slices, and feta (optional).
    Step 4
    Top with toasted almonds and honey orange dressing, or a dressing of your choosing.
    TIP
    Quickly turn this side salad into a meal by adding your favorite meat or  non-meat   protein.

    4 cups arugula or spinach
    6 mandarin oranges
    1 pomegranate
    1 avocado
    1/4 cup slivered, toasted almonds
    1/2 cup feta cheese
