    Directions

    Step 1
    Wash prep area, your hands, and all vegetables.  
    Step 2
    Chop garlic, carrots, onion, and cilantro. Grate cheese.
    Step 3
    Heat oil in a large pot over medium-high heat. 
    Step 4
    Add onions and sauté until translucent.
    Step 5
    Add red pepper flakes and garlic to onion. Cook for about 1 - 2 minutes.
    Step 6
    Add carrots and black pepper.
    Step 7
    Open and rinse the beans. Add beans and diced tomatoes.
    Step 8
    Add broth and Italian seasoning. Stir to mix completely and bring to a boil. Turn to lowest setting, cover, and allow to simmer.
    Step 9
    In a separate pot, cook the pasta according to directions.
    Step 10
    Once the pasta is cooked, add to the soup, stir, top with parmesan and cilantro and serve warm.

    2 tablespoons oil
    1/2 cup chopped onion
    1/8 teaspoon red pepper flakes
    5 cloves chopped garlic
    1 cubed carrot
    pepper to taste
    15 ounces low-sodium canned white beans
    28 ounces no salt added canned diced tomatoes
    2 cups low-sodium broth
    1 teaspoon italian dried herbs
    1/2 cup whole wheat pasta
    1/4 cup grated Parmesan cheese
    1 cup chopped cilantro
