    Lentil Mango Salad

    Directions

    Step 1
    Wash prep surfaces, your hands, and all produce. Rinse and drain lentils.
    Step 2
    In a large pot, add lentils. Cover with water by 2 inches.
    Step 3
    Bring to a boil over high heat. Reduce heat to a simmer. Cook until tender, about 20 minutes. Drain. 
    Step 4
    While lentils are cooking, peel and dice mango or apple. Dice bell pepper.
    Step 5
    Cut lemon in half. In a small bowl, squeeze juice. Discard seeds.
    Step 6
    If using, chop cilantro or parsley. Finely chop walnuts.
    Step 7
    In a large bowl, use a fork to whisk together lemon juice, oil, cumin, salt, and pepper.
    Step 8
    Add cooked lentils, mango or apple, and bell pepper. Mix well. If using, stir in herbs and nuts.

    1 medium mango or apple
    1 medium red bell pepper
    1 large lemon
    1 cup dried lentils
    1/4 cup oil
    1/2 teaspoon cumin
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1/2 cup minced parsley and/or cilantro (optional)
    1/2 cup chopped walnuts (optional)
