    Southwestern Black-Eyed Pea And Corn Salad

    Directions

    Step 1
    Wash prep surfaces, your hands, and all produce.
    Step 2
    Dice bell pepper, removing core and seeds. Peel and dice onion.
    Step 3
    If using, chop cilantro leaves. 
    Step 4
    In a colander, drain and rinse black-eyed peas and corn.
    Step 5
    In a large bowl, add pepper, onion, peas, corn, cilantro if using, and remaining ingredients. Mix well.
    TIP
    Use black beans in place of black-eyed peas if you like.

    Ingredients

    1 medium bell pepper
    1 small red onion
    2 cans (15½ ounces) black-eyed peas
    1 can (15¼ ounces) corn kernels, no salt added
    3 tablespoons oil
    2 tablespoons vinegar
    1 teaspoon cumin
    1/4 teaspoon salt
    1/2 teaspoon black pepper
    1/4 cup fresh cilantro (optional)
