Wash prep area, your hands, and all fresh produce.

Wash hands with warm, soapy water for 20 seconds after handling fish.

Chop onion into 10-12 chunks. Break pieces of onion up with fingers. Cut tomatoes in half. Cut broccoli into florets. Cut one lemon into thin slices. Cut the other lemon into quarters.
Step 4
Heat 2 tablespoons of oil over medium heat for about one minute. Place onion, tomatoes, and broccoli in pan and cook for 5 minutes, uncovered. Stir frequently.
Step 5
Squeeze half of lemon over contents of pan and season with salt and pepper.
Step 6
Place fish on top of vegetables and top with sliced lemon. Add fresh or dried rosemary.
Step 7
Cover pan and cook over medium heat for 6-12 minutes depending on thickness of fish. Fish is done when it flakes with a fork.
Step 8
Finish by drizzling fish with remaining 2 tablespoons of oil and dig in!
TIP
Serve with brown rice for a delicious combination. Add remaining lemon quarters to your next glass of water for a refreshing drink.
