    Spaghetti with Veggies and Meat Sauce

    Directions

    Step 1
    Wash prep area, your hands, and all fresh produce.
    Step 2
    Cook the spaghetti according to its package directions. 
    Step 3
    While you wait for the water to boil for the pasta, add oil and ground beef to a separate large pot. Brown beef over medium heat until no pink remains. While beef is cooking, mince the onion and garlic. 
    While beef is cooking, mince the onion and garlic. 
    Step 4
    Once beef is finished cooking, add the onion and garlic to the pot and continue to sauté until the onion is soft and transparent.
    Step 5
    While waiting for the onion and garlic to cook, shred zucchini and carrots with a cheese grater. 
    Step 6
    Add the shredded zucchini and carrots to your pot along with the basil, oregano, salt, and pepper. Continue sautéing until vegetables become tender, this will take about 7-10 minutes.
    Step 7
    Add pasta sauce and heat through.
    Step 8
    While pasta sauce is heating, drain noodles as soon as they are cooked.
    Step 9
    Turn off burner. Return spaghetti to the pot. Shred cheese.
    Step 10
    Add one quarter of the sauce mixture to pasta. Stir to coat.
    Step 11
    Divide pasta into serving bowls and top with additional sauce and parmesan cheese. Enjoy!

    8 ounces whole wheat spaghetti
    1 tablespoon oil
    1/2 pound lean ground beef
    1 onion
    2 cloves garlic
    1 zucchini
    2 carrots
    1/2 teaspoon basil
    1/2 teaspoon oregano
    1/4 teaspoon salt
    pepper to taste
    24 ounces canned or jarred low-sodium spaghetti sauce
    1 tablespoon Parmesan cheese
