Refrigerate or freeze these foods promptly

 

Perishables are foods or drinks that must be kept refrigerated or frozen. If perishables are not kept refrigerated or frozen, they can spoil, decay or become unsafe to eat.


Perishables must not sit out at room temperature. 

If you need to transport perishables (such as, from the grocery store to home) remember these rules:

  1. Perishables must return to the refrigerator or freezer within 2 hours of taking them out.   
  2. If it is hot out (above 90° F), perishables must return to the refrigerator or freezer within 1 hour.
  3. The sooner perishables return to the refrigerator or freezer, the better! Do not let them sit out at room temperature. 

Perishables include:

  • Meat
  • Eggs
  • Dairy
  • Poultry
  • Seafood
  • Fish
  • Vegetables or fruits that require refrigeration (more on this below)
  • Cooked leftovers
  • Take-out foods

What vegetables or fruits require refrigeration?

Most fruits and vegetables must be refrigerated or frozen. This is especially true for cut fresh vegetables and fruits. But, some fruits can be stored at room temperature for a few days. This resource contains more information on these fruits, including how long they can sit out.
